Lemon Rice with Red Lentils - South India

Ingredients:
(for 3-4 persons)

1 Cup of Basmati Rice
2 Table spoons of Red Lentils
1 Big Onion or 2 Little
1 Lemon
1/2 Green Chilli
Turmeric (Curcuma)

 


Wash Basmati rice and strain it well. Put little oil in pan and fry one cup of rice for short. Add two cups of water and 1/4 teaspoon of salt. After water start boiling, lower flame and leave it covered for cooking till all water evaporate - around 10 minutes. After rice is cooked, leave it to stay for short time covered.  

Cut 1 big or 2 little onions on thin slices..

 

 
Cut chilli on half and take 2 tablespoons of red lentils.  

Put oil into wok or frying pan; add onion, red lentils and half of chilli. Onion and lentils get taste from chilli, but after frying you should throw it out that meal not become too hot.  
Add turmeric. Rice will get yellow color from it. Also add 1/4 tea spoon of salt, and after mixing all with rice you can add more if it is needed.  
Fry lentils and onion on lower flame, because both, should be good fried, but not burned. Especially take care about lentils not to burn, because it gets bitter taste. But if it is not enough fried it will stay too hard for eating. Onion has to get dark brown color and to be crispy.  
Extract juice of half or whole lemon. Add it to rice and stir.  
Serve this delicious light and refreshing meal with benganraita (eggplant salad) and chapati, and enjoy it!  
Note1: Turmeric, known as natural antibiotic has much medical use. It is strong antioxidant with anti-inflammatory effects. It also has disinfecting function and have good effect on digestive tract. In medicine it is used for stomach and kidneys, and also like medicine for hepatitis, gallbladder stones and for gallbladder inflammation.

Note2: Red Lentils is rich with proteins and shorten in fats and calories. It is often used in anti-cancerogen diets like turmeric too.
