Vegetables with Corn Meal - Uppuma

 

Ingredients:

2 cups of Corn Meal
4-5 cups of Water
1 Potato cut on small pieces
1 Carrot cut on small slices
1 Onion cut on small pieces
1/2 of tsp. of Salt
Piece of grind Ginger
Turmeric if you have

 

 

Preparation

First fry corn meal on the pan without oil to get little color and remove it from pan..
Add oil to the pan and fry little piece of green chili, ginger, onion, potatoes, carrot, and also if u have add little pieces of eggplant. Fry it for short, around 3 minutes, and then add 4 cups of water (by taste u can add up to 5 cups), then add salt by taste. Make it to boil and cook for short 3-4 minutes.

Make a flame lower. Slowly add Corn meal with stirring all the time. Cook it for around 5 minutes or till it is cooked.
You can serve it with coriander leaves, curry leaves, or parsley.
